Chop enough baking apples  to fill at least half the volume of your crockpot. (I use JonaGold because that's the kind I grow, but any apple good for baking will work.) Add about half a cup raisins for every four cups of chopped apples. Sprinkle brown sugar and cinnamon over the top to taste. I use about two T. brown sugar and a teaspoon of cinnamon for every four cups of apples -- I really don't measure.  Stir well with large spoon until well mixed. Cook on low for about 4-6 hours for tender firm or as long as you want for the texture you want. 12 hours or more will be pretty mushy -- more like applesauce. My batch last night cooked for about 20 hours. I normally start this cooking before I go to bed and it's ready to eat hot in the morning for breakfast. The longer you cook this, the more the volume decreases. Last night's batch took the volume down by about 1/3. I recommend using at least eight cups of apples for a four-quart crock pot. Leftovers last about a week in the refrigerator or a few months in the freezer.
